Carrot Cake Porridge

A really delicious twist on a traditional breakfast…For only 2 syns!

Place 35g oats (heb), in a pan with 300 ml skimmed milk (hea), 1 peeled and grated carrot, 15 g of raisins, 2 tbsp sweetener, 1/4 tsp of mixed spice, 1/4 tsp cinnamon and 1/4 tsp ginger.

Bring to the boil and cook till the milk is absorbed.

Top with some of the grated carrot.

2 syns using the oats and milk as healthy extras.

Chicken Shish Kebabs

SYN FREE

Marinade:
Juice of half a lemon
1 garlic clove crushed
1/2 tsp cumin
1/4 tsp cayenne pepper
1/4 tsp paprika
Pinch of cinnamon
Pinch of salt

Chop up 2 boneless, skinless chicken thighs and toss in marinade mix. Leave to marinade for an hour or two.

Cook on a griddle pan (or frying pan) or on the BBQ.

Best Slimming World Chocolate Brownies

Well it’s taken quite a few experiments but I have finally come up with a Slimming World friendly brownie that doesn’t have the bitter after taste of sweetener.

Only 2.5 syns plus healthy extra B for all 4 brownies OR 2 syns per brownie

RECIPE

Mix 2 eggs, 35g oatbran, 3 tbsp sweetener, 1 tbsp cocoa powder and 2 tbsp of plain or vanilla yogurt.

Line a small shallow baking dish with baking parchment and pour in.

(I used two small tins 3 inches by 6 inches big).

Bake in the oven for 15 mins at 180 degrees C. Don’t be tempted to bake for longer or they will dry out.

Allow to cool on a rack and then enjoy!

Super Speedy Pasta Sauce

This is a super simple pasta sauce recipe that serves 4.

It has lots of hidden veg in it so it’s great for children and healthy eaters alike!

Put 1 carrot, 1 courgette, 1 onion, 2 celery sticks and 2 garlic cloves in a food processor and finely chop. (But don’t puree).

Then sauté the finely chopped veg until soft in a deep pan.

Add to the pan; 500g passata, 2 tbsp tomato puree, 1tsp salt, 1tsp canderel and half a teaspoon of pepper. Add in half a bunch of finely chopped basil.

Heat through and serve.

Peanut Butter Doughnuts

Mix 35g of oatbran, 1 egg, 2tbsp sweetener, 2 tbsp quark or yogurt, 1/2tsp baking powder and 2tbsp of PB2 powdered peanut butter.

Pipe into a silicon doughnut shaped baking sheet. Bake at 180 degrees C for 20 minutes.

Then pop out of the mould and allow to cool… enjoy dunked in coffee!
