Cook 140g mince (beef/turkey/quorn) with 2 tbsp tomato puree and 2 tsp mexican spice mix.
Serve with salsa in lettuce cups.
Try adding a dollop of greek yogurt and sliced black olives (8=1 syn), and or add your hea cheese allowance.
Serve with potato wedges for a bigger meal.
1 red chilli
2 garlic cloves
1 tbsp lemon juice
A 4cm piece of ginger
3 tbsp water
1 tsp, salt, canderel and ground dried lemongrass
Blend all the curry paste ingredients together in a food processor. I then put them in an ice cube tray and freeze so you have them ready when you need.
