Lemon and Sultana Scotch Pancakes

 

Ingredients:

35g oatbran

1 egg

1 tbsp. natural fat free yogurt or fromage frais

1 tbsp sweetener

zest of 1 lemon

15g sultanas

Method:

Mix all the ingredients together and then spoon into four heaps on a frying pan. Sprinkle the sultanas on top of each one. Fry for a few minutes then carefully flip and fry on the other side.

Yields 4 pancakes – 2 syns and a healthy extra B on the Slimming World plan or 260 calories for the entire recipe.

Serve with your choice of syrup:

2 tbsp maple syrup- 4 syns

2 tbsp agave syrup – 3 syns

2 tbsp honey – 5 syns
