Poulet au Citron et Lavande (Lemon & Lavender Chicken)

Adapted for the Slimming World diet
Based on a recipe by Rachel Khoo

This is a sweet scented dish that will really pleasantly surprise you.

Serves 1 – 2.5 syns per portion
(When entertaining just multiply the marinade ingredients by the number of chicken pieces)

1/2 tablespoon dried lavender
1/2 lemon, zest and juice
1 sprig of thyme, leaves pulled off stem
1 tablespoons honey
Pinch of salt
1 chicken leg/thigh piece (bone in, skin removed)

Mix together the lavender, lemon, thyme ans honey with a pestel and mortar (or bash the leaves with a rolling pin to realise the flavour and then mix with lemon and honey).

Coat the chicken in the marinade and then leave it for an hour (if you can).

Place chicken on a baking dish and pour over the marinade. Sprinkle the chicken with a pinch of salt.

Bake in a preheated oven at 200 degrees C for 45 minutes.

(Optional, place a slice of lemon on the chicken to help keep it moist).
