Spinach, Cottage Cheese & Tomato Egg Muffins

4 eggs
Handful of spinach torn up
4 tsp cottage cheese
4 cherry tomatoes
Salt and pepper

Spray a cupcake baking tray woth frylight. Place torn spinach in four cup holes and add a tsp of cottage cheese on top of each.
Beat the eggs with salt and pepper and pour over the cottage cheese.
Top each one with a tomato and bake at 200 degrees for 20-30 minutes till cooked through.
