Spiced Pickled Vegetables

Great for nibbling

Half a cauliflower cut into chunks, and two carrots peeled and cut into batons. Place in a jar and fill with 400ml white vinegar and 400ml boiling water and spices: 1/2 tsp curry powder, 1 tsp chilli flakes, 1 tsp cumin seeds and 6 tsp sweetener. Mix all together (give the jar a good shake) and leave overnight before digging in and enjoying.
