Serves 2 (syn free)
2 chicken breasts
4 spring onions, diced (white and green parts)
1/2 a red and 1/2 a yellow pepper
1 x 330ml can diet orange soda (eg fanta)
3 tbsp tomato passata
2 tsp vinegar
1/2 tsp dried chilli flakes
1/2 tsp salt
Cut chicken into mouth size pieces and stir fry in a pan. Add the orange soda, tomato passata, vinegar, chilli flakes and salt and boil rapidly for about 15 minutes for sauce to thicken. Reduce temperature and add vegetables and cook for a further 5 minutes. Add more chilli flakes or salt if required to taste.
Serve with rice or noodles.
