Thai Style Beef and Pumpkin Curry

300g beef, cubed
160g pumpkin, cubed
2 portobello mushrooms, cut into cubes
400ml beef stock
2 tbsp coconut milk
2 tbsp thai red curry paste
1 tbsp finely chopped coriander

Brown the meat in frylight and then simmer in the stock till tender. Add in the vegetables and remaining ingredients and simmer till pumpkin is cooked.  Add salt and pepper to taste.

Serves 2 (1.5 syn per portion)
