PUMPKIN SPICE MIX
1/4 tsp Ground ginger
1/8 tsp Ground nutmeg
Pinch of black pepper
Mix together spices and set aside till needed
Take 2 tbsp of cooked pumpkin and place in a large jug with 1 tbsp water, 2 tsp sweetener and 1/2 tsp spice mix. Blend with a hand blender into a paste.
Make an espresso shot or mix 1tsp strong coffee in 100ml of water. Pour the coffee onto the pumpkin paste and blend.
Then add 200ml of skimmed milk to the jug and blend again till you have a smooth liquid.
Transfer to a pan and heat, stiring carefully to ensure milk does not burn.
Then pour into a glass and sprinkle with cinnamon. Add extra sweetner if you desire.
