Mushroom Quinoa Risotto

1/3 cup quinoa
1 & 2/3 cups of stock
1 small onion, diced
1 garlic clove, finely chopped
200g mushrooms, sliced
1/2 tsp dried thyme

Saute the onion, garlic and mushrooms im a pan till light brown and set aside.
Boil the quinoa in the stock and when its almost entirely absorbed add the mushroom mix and continue to cook till liquid is absorbed, stiring in the thyme before serving.

Serves 1 (syn free)
