Chicken with tomato and red pepper sauce

Serves 4

4 chicken breasts
2 red peppers
6 tomatoes
1 red onion
2 garlic cloves
A tin of chopped tomatoes
Salt and pepper
1 tsp mixed herbs
1 tsp oregano

Chop the red peppers, fresh tomatoes, onion and garlic and roast in the oven till soft. Then blend with the tin of chopped tomatoes.
Cut chicken into pieces and brown in a pan with frylight. Pour over sauce and allow to cook for 10 minutes. Add seasoning to taste.

Serve with mash potato or rice.
