1 Egg beaten
1 tsp Oregano, Salt and Pepper
Peel and coarsely grate the potatoes (use a food processor if you have), squeeze out as much liquid as possible and place in a bowl.
Grate or finely chop the onions, add to the potato with the egg, oregano and seasoning then mix. Divide the hash browns into 8 or to size you prefer and chill in fridge for 20 minutes.
Spray a frying pan with fry light and working in batches fry the hash browns for around 10 minutes each side until lightly browned and cooked through.
