Nice hot…even better cold.
1 chicken breast
1 dsp tomato puree
1 tsp schwartz cajun seasoning
1/2 tsp canderel
1/2 tsp lemon juice
Mix together paste ingredients in a bowl and set aside.
Put chicken breast on a board and cover with cling film. Bash the chicken breast out thin till its approx 0.5-1cm thick.
Place two pieces of string under the breast.
Spread paste on the chicken. Roll it it up and tie the string around it. Wrap the chicken roll in foil. Place in the oven and cook at 200°c for 30 mins. Remove from oven and leave it to sit for 10mins. Then unwrap and carefully slice into pinwheels.
