Roasted Red Pepper Tarts

Syn free using oatbran as a heb
35g oatbran (heb)
2 eggs
A piece of roasted red pepper
3 tsp natural yogurt
Salt and pepper

Mix together the oatbran and one egg and let it sit for 10mins and allow it to absorb. Mix in a good couple of pinches of salt and pepper.

Divide the oatbran mix between 3 muffin cases and using your fingers mould into a pastry cup style shape (see picture).
Put in the oven and bake for 15 mins at 200°c.
Remove from the oven and put a few pieces of chopped roasted red pepper in each cup.
Then beat the other egg with salt and pepper and pour a little in each cup- dont overfill its just to set the peppers. Then put it back in the oven for 10-15mins till the egg sets.
Remove from the oven and allow to cool on a rack.
When cool spoon a tsp of yogurt onto each tart and top with a piece of red pepper.
