4 chicken thighs/breast, skin and fat removed, cut into mouthsize pieces
1 large onion diced
1 x 330ml can of diet coke
6 tablespoons of passata
2 tablespoons of soy sauce
1 chicken stock cube dissolved in a few tablespoons of boiling water
Cool onion in fry light in the pan. Add in chicken and start to brown it. Pour in all other ingredients and cook. Stir the sauce, and let it cook on the heat (stiring occasionally) and it will thicken.
Serve with rice or chips and veggies. Yum!
