This salad is particularly common in Arab nations and is normally made with a lot more oil. Below is my low syn Slimming World friendlu version.
1 cup of bulgar wheat cooked in boiling water
1 red onion, finely diced
1 large bunch of parsley including stems, chopped
1 bunch of mint leaves, finely chopped
4 large tomatoes, finely chopped
1 tbsp lemon juice
1 tbsp olive oil
1/2 tsp salt and pepper
Toss all the ingredients together. The whole bowl has 6 syns. Dont skip the olive oil it adds depth of flavour.
Serves 6 generous portions at 1 syn each of 12 side dish sized portions at half a syn each.
