Tomato & Fennel Soup

Serves 8

3 bulbs fresh fennel, diced
1 large onion, diced
2 tsp garlic,finely chopped
4 tins of peeled plum tomatoes
1 ltr of chicken stock
1 tsp salt and pepper
3 tsp fresh thyme leaves

In 300ml of water boil the fennel and onion until soft. Then add in the remaining ingredients boil for a further few minutes then blend. Add in a little more salt and pepper to taste or a touch more water for a thinner soup. Heat and serve.
