Carrot Cake

My disclaimer!! 😉 Slimming World consider rice pudding syn free and these are technically rice pudding cakes so 1/2 syn each if you want… but if you want to call it a tweak then they are 2 and half syns per cake allowing for the calories of the rice…. no right or wrong your choice! 🙂

220g white rice (cooked weight-pudding/short)
2 eggs
2/3 cup sweetener
1 tsp cinnamon
1/4 tsp mixed spicw
60g carrot, grated
1/4 tsp orange blossom water (orange zest if you dont have blossom water)

Icing drizzle:
40g icing sugar mixed with a few drops of lemon juice.

Mix ‘cake’ ingredients together and divide between 8 cupcake cases. Bake for 20-30 minutes.

When cool, drizzle with lemon icing and serve with fruit.
