Mushroom & Fennel Potato Pie

800g new potatoes, quartered
200g mushrooms, sliced
1 fennel, diced (or a leek)
4 garlic cloves
2 eggs
Salt, pepper, thyme

Spray the potatoes with frylight and roast with the skins on with garlic until cooked.

Then take half the potatoes and roughly smash them. With a hand blender, blend the other half of the potatoes with one egg and 1tsp salt and pepper. Then mix all the potatoes together. Put the potato mix in a lined flan dish and spread out…creatig an indent in the middle.

Bake in the oven for 15 minutes at 200°c.

Cook the mushrooms and fennel in frylight. Remove from the heat and when cold add salt and pepper and a tsp of thyme. Beat the other egg and add to mushrooms. Then pour into the potato flan and bake for 20 minutes.

Serve hot or cold.
