Syn-free Pesto Pasta
30g pack of fresh basil
2 garlic cloves roughly chopped
1/2 tsp salt
2 tbsp water
200g pot of 0% fat greek style yoghurt
350g dried pasta
150g edamame beans
Salt and pepper
In a food processor blend the basil, garlic, salt and water till it resembles a coarse paste.Stir in the yoghurt and set aside.Cook pasta according to instructions on packet. Rinse through with cold water to remove starch.Cook brocolli to taste (I like it blanched so its still got a little bite to it). Rinse in cold water.Mix together, pasta, brocolli, edamame beans and yoghurty pesto. Add salt and pepper to taste.
Enjoy cold or reheat and have hot.
