Spiced Vegonaise! … (Not quite bolognaise)


Spice Mix
1 teaspoon ground cumin
1 teaspoon ground ginger
1 teaspoon salt
3/4 teaspoon black pepper
1/2 teaspoon ground cinnamon
1/2 teaspoon ground coriander
1/2 teaspoon ground allspice
1/2 teaspoon paprika
Mix together in a jar. You will have some leftover for next time!

Ingredients
1 onion diced
1 aubergine cubed
1 courgette cubed
1 red pepper cut into chunks
300g baby plum tomatoes
250g quorn (or meat mince)
3 tbsp tomato puree mixed in 1 cup water
3 tsp spice mix
1 tbsp canderel
Salt to taste

Roast the tomatoes in the oven till they start to brown. This will bring out the natural sugars.
On the hob, saute onion, aubergine and courgette in fry light. Add in the tomatoes, peppers and quorn.
Then add in spice mix and tomato puree mixture, canderel and salt to taste. Cook till veg is cooked through.

Serves 4
Serve with baked potato, rice or pasta
