Chicken Jalfrezi

Serves 2 (syn free)

1/4 tsp cumin
1/4 tsp ground coriander
1/2 tsp curry powder
1 green chilli, deseeded and chopped
1 tsp salt
1 tsp canderel
1 onion, diced
A (walnut sized) piece of ginger grated
1/2 orange/red pepper, sliced
1/2 yellow/green pepper, sliced
200g chicken, diced
1/2 tin chopped tomatoes, blended in a jug

In a pan, brown the onions in fry light. Add in the chicken and the cumin, coriander and curry powder and cook. Add in the peppers, ginger and chopped chilli and cook for a minute or two, then add in the blended tomatoes, salt and canderel. Taste and add more salt to taste if needed.
